The story
Chef Patron Trish Hilferty and Charlie Bousfield established The Canton Arms in 2010 following their time at the Anchor and Hope. They built a reputation where Modern European cooking meets the rhythm of a busy Stockwell pub. The duo remains hands-on, treating the kitchen as an extension of the bar to keep the food grounded in the neighbourhood it serves.
Ingredients drive the daily changing menu, which features wild line-caught Mersea Island sea bass and Tamworth pork from Swaledale Foods. Large format dishes encourage sharing, such as the seven-hour braised Salt Marsh lamb shoulder or beef shin bourguignon served with crusty bread. This approach to Modern European fare balances rustic comfort with precise sourcing, seen in dishes like crispy blood cake with homemade quince jam or roast hake paired with crab bisque. House-made sausages and charcuterie round out the selection alongside baked goods turned out each morning.
Recognition follows the quality, including a recent Good Food Guide award and the Hardens Best London Pub title. The beverage programme matches the food's dedication to provenance. The cellar holds low-intervention wines that rotate with the seasons, supported by a rotating tap of real ales.
