Max Tobias and his team have spent more than a decade refining their sourdough techniques while running a training programme for young people facing employment barriers. This commitment to skill sharing earned the group a Local Gem recognition from The Good Food Guide for 2026. Their operation now extends beyond this Harringay location to include a Dalston headquarters, a Highbury Fields van, and a roving milk float. The kitchen treats every loaf as a practice in patience, relying on long fermentation rather than shortcuts.

Savoury Bakes and Evening Shifts

Morning service revolves around flaky buns dusted with freshly ground cinnamon and robust focaccia loaded with roasted celeriac. Those sandwiches feature a spicy pilpelchuma paste, whipped feta, and toasted almonds arranged deliberately on the bread. As evening approaches, the menu pivots toward pizzas and curated wines. Thursday through Sunday tables fill quickly when the café transforms into a proper dinner venue.

For more than a decade, Max Tobias and co have been leading the field with brilliant baking, good community vibes and a training programme supporting young people facing barriers to employment. In addition to the bakery, café and baking school at the Dalston HQ, Dusty Knuckle now also comprises this Harringay offshoot, a van at Highbury Fields and a roving milk float. Bacon-and-egg breakfasts give way to lunches of famously stacked sarnies (perhaps roasted celeriac with spicy ‘pilpelchuma’ paste, whipped feta and smoked almonds on bouncy focaccia), while the flaky, sugar-dusted morning buns with freshly ground cinnamon work as an all-day treat. Come sundown (Thursday-Sunday), things get a little smarter with pizzas, salads and wines.
