The story
Tom Brown at The Capital is a homecoming for the acclaimed Cornish chef. Brown first made his mark in London as head chef of Outlaw’s at the same Knightsbridge hotel, retaining its Michelin star. After opening his own Hackney restaurant Cornerstone—where he earned another star—he returned in April 2025 to launch his flagship at The Capital Hotel. The 28-cover dining room was awarded a Michelin star in February 2026, affirming this exciting new chapter.
Originally from Cornwall, Brown’s career began in the South-West, working at Rick Stein’s before spending three years with Nathan Outlaw. That training is evident in his cooking: clean, creative, and produce-driven. The menu offers an exceptional selection of seafood alongside fish, meat and vegetarian dishes, all presented with refined elegance.
The restaurant occupies a sophisticated space within The Capital Hotel, a 5-star boutique hotel on Basil Street in the heart of Knightsbridge. The atmosphere is relaxed and welcoming, with just 28 covers ensuring an intimate experience. Large windows overlook the quiet street, and the dining room balances luxury with genuine warmth.
