The story
Set within the 12-acre grounds of Whatley Manor, a Cotswolds country house hotel, The Dining Room is the estate’s flagship restaurant. The kitchen is led by Executive Chef Ricki Weston, whose cooking is described by the hotel as “driven by instinct, integrity, and a deep respect for ingredients.” The result is a tasting-menu experience that earned the restaurant a Michelin star for high-quality cooking.
Weston’s menus carry “a touch of nostalgia” and reflect his own culinary journey. The evening begins in the Drawing Room before guests move into the kitchen to meet the chef and sample his “playful yet refined dishes.” Sustainability is central: the kitchen repurposes yesterday’s bread, turns kitchen waste into signature condiments, and ferments root vegetables from the hotel’s own Kitchen Garden to extend their seasonality. Honey comes from the estate’s beehives.
The Dining Room offers two tasting options: a nine-course menu at £175 per person and a six-course menu at £150 per person. Both showcase seasonal ingredients with elevated flavours and contrasting textures. A Journey Wine Pairing is available for each, selected by the sommelier.
Dinner is served Thursday to Sunday from 6.00pm to 8.00pm, by pre-booked table only. The restaurant’s fine-dining focus and Weston’s thoughtful, ingredient-led approach make it a destination for those seeking a memorable meal in the Wiltshire countryside.
