Companio opened its doors in Manchester as a direct response to the demand for artisan bakery craft. The kitchen was established around a simple premise: slow rising dough and properly tempered butter define this small scale operation. You will find staff working directly behind the counter, handing out freshly baked focaccia alongside specialty coffee pulled from their own espresso machines. This straightforward approach earned the Good Food Guide Local Gem recognition for 2026, proving that consistent technique still draws crowds through narrow streets.

Daily breads and savouries

The display cases rotate according to what comes out of the ovens each morning. Wild garlic pesto and mozzarella brioche sit beside meal bread, a dense variety of stuffed pizza dough that locals frequently choose for lunch. Sandwiches arrive on house baked ciabatta and focaccia throughout the week, with the classic BLT remaining a reliable crowd favourite. When the afternoon service winds down, customers often receive a complimentary portion of the Salford 5 seed sourdough, which carries enough visible grains to keep any pantry stocked until the next delivery.

Two distinct kitchens

The original Ancoats unit started as a compact workspace that recently added indoor seating for those who prefer a table over a takeaway box. Demand grew quickly, prompting the team to open a larger open plan location at sixty Spear Street in the Northern Quarter. Both sites maintain the same production standards, grinding ingredients on site and brewing coffee before the first customer arrives. Wholesale orders flow out to restaurants across the city, yet the primary focus remains serving fresh sourdough and pastries to anyone walking through the door of this independent bakery.

Ancoats’ narrow post-industrial streets are practically awash with artisan bakeries these days, and Companio is one of the finest. Croissants, laminated with slow-churned butter from the Edinburgh Butter Co, are among the best in town, but there are also savouries such as wild garlic pesto and mozzarella brioche or ‘meal bread' (a variety of stuffed pizza dough) plus daily sandwiches on focaccia and ciabatta (the BLT is a local fave). If you’re there at close of play, you might be gifted a left-over loaf (we scored the excellent ‘Salford 5-seed’ sourdough packed with enough seeds to satisfy your inner budgie). The tiny Ancoats original (now with indoor eating) has spawned a bigger, open-plan offshoot at 60 Spear Street in the Northern Quarter.
