The Collective Kitchens

Exhibition brings together independent culinary voices in a single Manchester venue dedicated to global cuisine. Husband and wife team Ben and Bo lead the Thai station alongside head chef Peter Latta, blending Isaan heritage with Bangkok technique. Grant runs the Italian pasta kitchen, drawing on his Stoke upbringing to shape home-style recipes. This collective approach allows guests to order across multiple stations while receiving full table service.

Seasonal Plates and Techniques

The kitchens rotate their offerings throughout the year, though certain preparations remain consistent favourites. You will encounter smoky skewers glazed in rich marinades alongside delicate tempura vegetables paired with garlic aioli. Grilled Bavette steak arrives finished with truffle and brown butter, while Iberico cuts rest beside charred aubergine and honey purée. Each operator maintains its own approach to international cooking without compromising the shared dining flow.

Space and Sound

High ceilings and an industrial layout create a spacious environment that shifts from relaxed lunches to energetic evenings. The venue splits into four distinct zones, including a snug area and communal benches near the bar. Craft cocktails feature house-infused spirits and seasonal garnishes designed to complement every course. The Good Food Guide recently recognised the spot as a Local Gem, noting how the combined kitchens deliver a cohesive world-spanning menu without sacrificing quality.

There’s much to like about this big, high-ceilinged space – a laid-back, industrial-chic environment where friendly staff and immersive live music at weekends add to the upbeat vibe. Food is centred on several kitchens lining the margins of the dining area, where iterations of Baratxuri, Jaan by Another Hand and Osma create ‘a collective kitchen space’ delivering a globe-straddling repertoire ranging from classic duck liver parfait to tuna sashimi with tomato and XO ponzu. Highlights have included Ibérico Secreto with charred aubergine, shallot, beer and honey purée, a bavette steak with truffle and brown butter sauce, and delicate sprouting broccoli tempura with bravas sauce and garlic aïoli. To drink, there are cocktails, beers and modern wines.
