The Chef and His Vision

Skof introduces a new standard for modern British cooking in Manchester, anchored by Chef Tom Barnes' first solo venture. Located inside the iconic Hanover building, a former drapery warehouse in the NOMA district, the restaurant offers a thirty-six-cover space defined by warmth and craft. Barnes brings extensive experience from Simon Rogan's L'Enclume, where he served as executive chef, to a kitchen that values simplicity without compromising on excellence. The venue has already garnered significant acclaim, retaining its Michelin star and securing AA Restaurant of the Year honours. Born in Cumbria, Barnes channels his Northern heritage into a menu that rejects pretension while maintaining exacting standards.

A Menu of Seasonal Rigour

The kitchen presents tasting menus in varying lengths, allowing guests to curate their experience around the day's best harvests. Ingredients from Our Farm appear frequently, grounding the food in hyper-local provenance. Dishes like Oscar peas served with Herdwick lamb and pickled walnut reflect a deep dedication to British cuisine. Seafood selections highlight coastal waters, with chalk stream trout accompanied by golden beetroot and hot sauce, while steamed west coast cod pairs with smoked eel and roasted shrimp. Signature plates like the Dexter beef taco demonstrate a playful approach to format, marrying rich meat with broccoli and roasted yeast. Every course aims to deliver surprise and flavour, highlighting the versatility of British cuisine through a perfectionist lens.

Designed to feel welcoming rather than formal, the dining room strips away tablecloths and dress codes in favour of characterful materials. Parquet floors and exposed brick create a backdrop for an energetic atmosphere, complemented by a soundtrack curated by Barnes himself. Personal artwork referencing the chef's life adds layers to the environment, while the service team, led by manager Sean Oakford, ensures a relaxed flow. The drink programme matches this ethos, offering a curated wine list alongside creative cocktails developed with Atelier Pip. Guests can enjoy pairings tailored to their palate, including non-alcoholic options and a collaboration beer brewed with local brewery Track.
