The kitchen draws heavily on Tamil Nadu traditions, particularly the Sutta Kari method of open-flame grilling. Meat marinates overnight in crushed garlic, black pepper, fennel and curry leaves before meeting hot coals. This technique creates a sharp, earthy crust that stays tender inside, deliberately avoiding the heavy cream sauces common elsewhere. This focus on regional Indian cuisine keeps the spice profiles bright and direct.
