Overlooking the cliffs of Fistral Beach in Newquay, Ugly Butterfly by Adam Handling is a restaurant built on a simple conviction: there is no such thing as waste. The name itself reflects that philosophy – just as every butterfly is beautiful, every ingredient can be transformed into something remarkable with skill and respect. This approach has earned the restaurant a Michelin star, recognising high quality cooking that is deeply rooted in its Cornish surroundings.
Chef Adam Handling MBE, who started his career at Gleneagles and later refined his zero-waste ethos during travels in Japan, brings his vision to the South West. Here, the menu is hyper-local and traceable, drawing almost entirely from the land and sea of Cornwall and the South West of England. The kitchen buys produce whole and uses every part, foraging from the coastline and working closely with local fishermen, farmers and suppliers. The result is an ever-changing menu that tastes like Cornwall itself.
Guests can choose between an 11-course tasting menu at £175 per person or a 4-course restaurant menu at £120, both with optional supplements. The dishes are a true expression of the region – wild, coastal and precise. In summer, the Terrace opens for al fresco dining, where you can watch the waves break on the shore while enjoying either menu. For a more relaxed experience, the award-winning afternoon tea is served in the Tea Lounge, blending the history of High Tea with the luxury of Afternoon Tea.
The setting is as memorable as the food. Housed within The Headland hotel, the restaurant offers panoramic views over Fistral Beach.
