A quarter century of curation

Define Food & Wine in Northwich opened its doors in 2000, rooted in a Mediterranean approach to seasonal cooking. Jon Campbell founded the establishment after working through French vineyards and Champagne houses. His vision quickly expanded into a dedicated kitchen led by Head Chef Richard Rowley. The team treats every plate as an extension of their cellar philosophy, prioritising straightforward technique over heavy sauces.

Surrounded by glass and oak

The dining room sits directly inside the merchant floor, where rows of bottles create a quiet backdrop for conversation. Recognised in The Good Food Guide for this balance of retail and dining, the space avoids pretence entirely. Natural light fills the area during afternoon service, while evening tables settle under simple fixtures. Regular book clubs and winemaker dinners keep the atmosphere conversational.

Tapas shaped for sharing

Small plates form the backbone of the menu, drawing heavily from Mediterranean flavours. Pan-roasted chorizo simmers in red wine and tomato until the edges crisp, while fried Monte Enebro goat cheese arrives drizzled with orange blossom honey. Garlic-butter prawns cook quickly enough to retain their snap, and a fresh pea salad gains depth from a cured egg yolk. Evenings close with an affogato blended using Pedro Ximénez sherry and dark roast espresso.

Set within one of the best independent wine merchants in the country, surrounded by hundreds of covetable bottles, Define also features a regularly changing wine list that tempts one to break the bank with a bottle of superb, exclusive Jacques Selosse Champagne. It’s like finding a boutique selling Dior couture in the middle of a field. The restaurant itself is modern and airy, with the culinary emphasis on local and seasonal food. The owners also showcase excellent cheese and charcuterie from their in-house deli such as Cashel Blue with pickled cherries, almond and linseed toasts, fried Monte Enebro goat’s cheese with orange-blossom honey, and pan-roasted chorizo with red wine and tomato. A summery dish of garlic-butter prawns delivered fully, while an asparagus salad with cured egg yolk and fresh peas was charmingly crisp and fresh. Some main-course meats have been a touch disappointing, but there are also specialities such as pulled lamb shoulder with tabbouleh, mint labneh and spiced lamb sauce to consider. After that, the kitchen's take on affogato involving vanilla ice cream drizzled with Dark Woods espresso and Pedro Ximénez sherry makes a splendid finale. Also look out for special themed dinners hosted by visiting winemakers.
