Foundations and location

Dave and his Australian wife Chantel built Salumi after more than fifteen years operating independent hospitality ventures across Plymouth. They converted a site that once housed the Brunel Hotel into a relaxed dining room that now shares its walls with an eighteenth-century pub structure. The layout features several interconnected floors and a sheltered beer garden where regular live music draws crowds between shows at the nearby Theatre Royal. Their approach strips back formal dining conventions to focus on straightforward seasonal cooking and attentive service.

The kitchen and style

Jake Hardington leads the brigade with a philosophy centred on simple ingredients executed precisely. Dave’s earlier career in award-winning kitchens established a foundation for refined technique, while his travels introduced a consistent thread of Asian flavour profiles throughout the menu. This blend produces contemporary Asian touches alongside classic modern British comfort plates without forcing either direction. The kitchen rotates dishes weekly based on local harvests and trusted regional farms listed prominently on a dedicated wall board.

Plates and presentation

Guests often start with a broad earthenware bowl of smoked mackerel pâté garnished with pickled vegetables and toasted hazelnuts. Heavier mains feature Dartmoor lamb rump served with pommes Anna and black garlic purée, or duck confit paired with a pork and shrimp bao bun. Sweet finishes lean toward substantial classics like a raspberry trifle layered with honeycomb. The Good Food Guide recently noted how these balanced presentations match the venue’s energetic yet comfortable atmosphere.

A little out of Plymouth city centre, along the route to the international ferry terminals, this is the latest venture from David Jenkins and the team behind Rock Salt (now closed). It's a place that's determined to demonstrate its versatility, with an outdoor area as well as a warren of indoor spaces on different levels – plus regular music nights to add to the gaiety. Jake Hardington cooks a fairly mainstream brasserie menu, with filled bagels (a speciality), a good-value fixed-price lunch and a roster of pedigree Devon suppliers proudly credited on a wall-board. Presentations aim to be eye-catching – witness a broad earthenware dish of gently flavoured smoked mackerel pâté (looking like a bowl of creamy soup), dotted with diced pickled veg, hazelnuts and dill, accompanied by seeded stout and treacle bread. For main course, there could be duck confit with a pork and shrimp 'baozi' or Thai pork curry, but also appealingly tender Dartmoor lamb rump with pommes Anna, roasted asparagus and black garlic purée. Desserts will push most buttons with cheesecake, toffee pudding and the like: our hefty sundae-glass serving of raspberry trifle came topped with chunks of honeycomb, alongside a beautifully intense raspberry sorbet. The flair and finish of the cooking deserves much better wines than the short, perfunctory selection, but there are tempting cocktails too.
