The story

Chater's Saffron Walden: Modern European Dining in a Converted Warehouse

Origins in a Converted Warehouse

Chater's sits in a converted warehouse on Church Street in Saffron Walden, where founders Max and Máire Chater joined forces with Dan Joines to build an independent kitchen and bakery. What began as a destination for coffee and pastries has evolved into a full-service restaurant serving seasonal Modern European dishes throughout the week. The space retains its industrial roots with high ceilings and polished concrete floors, while an open kitchen invites diners to watch the team prepare meals alongside the bar.

Seasonal Plates and House-Made Pasta

The kitchen follows a single menu across lunch and dinner, structuring the meal around small plates before moving to fresh pasta and seasonal main courses. The approach leans toward Modern European cooking with distinct Italian influences, showcased by house-made pasta like canestrini with pork shoulder and cime di rapa, or spaghetti with tomato and anchovy. Substantial dishes anchor heavier orders, such as confit duck leg with cassoulet and sea bream with borlotti beans. Fresh baking continues the theme, with daily pastries and desserts including torta caprese and amalfi lemon tart available to finish the meal.

Provenance Wines and Sunday Rhythms

Beverages center on natural wines from small growers across Italy, France, and the UK, selected to complement the Modern European menu with bottles chosen for easy enjoyment. The cocktail program utilizes vermouth and spirits produced at the Vault Aperitivo distillery located next door, ensuring fresh components in every drink. This dedication to quality underpins the accolades received, including a 'Good' rating in The Good Food Guide and notes from Grace Dent regarding the impeccable curation. Sundays offer a distinct rhythm with a rotating three-course lunch menu that highlights seasonal roasts and puddings, inviting guests to linger well into the afternoon.

The Good Food Guide — Good

‘The whole vibe is incredible,’ writes a fan of this ‘absolutely fabulous’ family-run spot just off Saffron Walden's main square. Chater’s nods to its warehouse origins with high ceilings and polished concrete floors, while the kitchen taps into a local appetite for keenly priced food and good ingredients. Drop in for coffee and cake from 9am, or come for a simple Italian-style lunch, an aperitivo or a full evening meal. Small plates anchor the offer, from cured trout with horseradish and broccoli to chopped beef with crisps. If you're really hungry, a dish of homemade pasta sorts that out pronto: try the canestrini with pork shoulder and cime di rapa. Desserts keep it simple, with tiramisu perhaps lining up alongside white chocolate panna cotta and rhubarb. There is vigorous applause for the Negroni made with red vermouth from the Chater's Vault distillery next door, while Ark Pinot Gris from Mount Farm Vineyards near Sudbury is an appealing entry point on the wine list. Service is every bit as warm.
