The story
The Walrus occupies a two-floor space on the banks of the River Severn in Shrewsbury. An upstairs cocktail bar sets the tone, with high-end wines and a seasonal bar menu. Downstairs, the open kitchen puts the cooking on display. Co-owners Ben Hall and Carla Ernst run the restaurant in Ben’s hometown, bringing a personal, hands-on approach to every service.
Seasonality and locality are the foundation. The kitchen works closely with Shropshire suppliers, sourcing produce, meats, and seafood at their peak. The tasting menu changes with the seasons, but recent dishes give a clear picture of the style: cured salmon with confit leek and yuzu ice; English asparagus with gribiche dressing and hazelnut pesto; Herefordshire beef fillet with crispy potato and Bordelaise sauce. Desserts like strawberry sorbet with woodruff panna cotta and pistachio cake with honey ice cream show a careful balance of texture and flavour. A vegetarian tasting menu and a pescatarian option are also available, alongside a Sunday lunch.
The Walrus earned a place in the Michelin Guide 2026, where inspectors praised the “ambitious modern cooking” that “delivers an intriguing blend of pronounced flavours and contrasting textures.” The Michelin entry also notes how the team makes “great use of Shropshire’s larder” – a fitting description for a restaurant that puts Modern British cuisine at the heart of its identity.
