The building began life as a 16th-century salt house used by Benedictine monks, and has been transformed into an award-winning bed and breakfast with a restaurant that earned a Michelin Recommended distinction. The setting is relaxed and light-filled, with views over the gardens.

Dining at the Salty Monk

The restaurant focuses on the best of the Southwest, with an emphasis on sustainability and seasonality.
