The story

Canteen Totnes: Local Gem Dining in a Hidden Mansion Courtyard

Founders and the In-House Kitchen

Canteen Totnes seasonal cooking draws its foundation from Tara Vaughan-Hughes and Matty Glennon, who built the venue after years of collaborating at the Dartington Estate. Their approach keeps nearly every element under their own roof, from simmering soups and baking bread to crafting house-made lemonade and chai. This hands-on method supports the wider local cuisine network while allowing full control over flavor profiles. Daily specials rotate across the blackboard, ensuring the menu shifts with whatever arrives fresh from nearby fields.

Seasonal Plates and Bold Flavours

Mornings at the venue feature hearty options like fluffy Vermont pancakes or the Captain’s Eggs, which pair poached eggs with smoked haddock and curry herb butter. Lunchtime service leans toward substantial grilled sandwiches, highlighting juicy slow-cooked chicken tossed in gochujang mayo or roasted beetroot served alongside tangy sauerkraut and sharp North Devon Cheddar. Every plate rests beside brightly dressed salad leaves or a crisp seasonal slaw that cuts through richer elements. This seasonal cooking style prioritizes bright acids and textured grains.

The Courtyard and Community Space

Located within The Mansion near the base of Fore Street, the dining room sits quietly away from the main retail strip. Patrons can step out into a colorful courtyard when temperatures rise, pairing meals with homemade lemonade or chilled Heron Valley apple juice. The Good Food Guide highlighted this setup as a Local Gem, noting how the straightforward execution of breakfast and lunch staples creates a reliably satisfying stop. The space operates alongside a community gallery, keeping the atmosphere relaxed and focused on everyday pleasure.

The Good Food Guide — Local Gem

Part of a community-owned gallery and co-working space, this nourishing daytime café at the bottom of Fore Street is just on the right side of worthy. Turkish eggs, smoked haddock and fluffy Vermont pancakes start the day, while at lunch there’s a line-up of very good grilled sandwiches: juicy slow-cooked chicken with gochujang mayo, perhaps, or thick-cut, beautifully roasted beetroot with sauerkraut and punchy north Devon Cheddar. To fill the plate, there are brightly dressed, farm-fresh salad leaves and a perky seasonal slaw. When the weather’s good, make the most of the colourful courtyard with a refreshing glass of homemade lemonade or a Heron Valley apple juice slushy.
