The story
Y Talbot has stood in the centre of Tregaron for centuries, originally a drovers’ inn where cattle herders would rest on the long journey to market. Today, it is a beautifully restored hotel, dog-friendly pub, and award-winning restaurant that has earned a Michelin Recommended distinction for 2026. The spirit of welcome remains unchanged, now paired with a kitchen that draws diners from across Mid Wales and beyond.
The food at Y Talbot is led by Head Chef Dafydd Watkin, who trained with Marco Pierre White. He designed the kitchen himself and changes the menu with the seasons, drawing on what is growing, grazing, or swimming nearby. Expect local beef, line-caught fish from Cardigan Bay, and vegetables from nearby farms. The cooking is described as fine dining without the fuss – rich, comforting plates with balance and flair. The same menu is served in both the elegant restaurant and the more casual bar, where you can eat beside an open fire.
The bar is a CAMRA member and Cask Marque accredited, offering a rotating selection of Welsh real ales from breweries like Wye Valley, Mantle, and Purple Moose. The wine list is handpicked by Tracy Watkin to match the food and the Welsh weather. The building itself has flexible spaces for dining and drinking, from the historic front bar with its huge fireplace and slate floors to the light, airy restaurant that was once the carriage house. Dogs are welcome in the bar areas, and there is a sun-drenched patio for warmer months.
