The story
In the market town of Whitchurch, Stuart and Frances Collins run Docket Restaurant, a place where the name itself speaks to connection: the ticket that links the front and back of house. Since opening in August 2017, their goal has been straightforward — great food and service in a relaxed environment. The restaurant has been recognised by the Michelin Guide each year since 2020, a mark of consistency that reflects their focused approach.
The menu is a tasting menu, changing with the seasons and inspired by the Collins’ travels. Stuart’s career includes time with Gary Rhodes, Michael Caines MBE, and Gordon Ramsay in London and New York, before he became Executive Chef at the Abode Hotel in Chester and later oversaw award-winning restaurants in Doha. In 2021, he represented the Central region on BBC’s Great British Menu, reaching the final. Frances, with experience in restaurant management alongside chefs like Michael Caines and Guy Savoy, runs the front of house with warmth and knowledge.
A sample menu might begin with snacks and Freedom Four onion seed beer bread with Appleby’s whey butter, followed by red beetroot with goat’s cheese, Shropshire honey, and pine nuts. Hand-cut pappardelle with Shropshire lamb shoulder and basil sunflower seed pesto leads into hake fillet with red pepper, fennel, and saffron sauce, then rose veal fillet with celeriac, wild garlic, and veal sauce. Desserts include yoghurt with pistachio praline, rhubarb, and rose, and milk chocolate cremeaux with aerated white chocolate and Jerusalem artichoke. A wine pairing, curated bottle by bottle, is available for £30 per person.
The restaurant works closely with local growers, producers, and distillers across Shropshire, sourcing seasonally for freshness and flavour. Dining options include the main room, a chef’s counter, and a private dining room for five to eight guests that opens directly onto the kitchen. Local artist Sam Pooley-Stride’s work adds colour to the walls.
