The story
Chalk sits on the Wiston Estate, a working farm and vineyard in the South Downs. The restaurant draws its name from the chalky soil that shapes the estate’s wine and produce. Everything on the plate comes from the land and sea nearby: ingredients grown, farmed, and foraged from the estate itself and the Sussex Coast. The kitchen works with the seasons, so menus change regularly—a la carte at lunch, and a set six-course Estate Menu for dinner on Friday and Saturday evenings.
The dining room is a converted barn, light and airy with an exposed roof, pendant lamps, whitewashed walls, and original artworks. It feels calm, unhurried, and welcoming. Coffee and pastries are served from 9.30 each morning, perfect before or after a walk on the Downs. The courtyard opens on sunny days for drinks and a more relaxed bite. The whole restaurant is fully wheelchair accessible, with nearby parking and accessible toilets.
Chalk earned a place in the MICHELIN Guide 2026 and was named Restaurant of the Year at the Beautiful South Awards 2025–26. TripAdvisor’s Best of the Best 2025 placed it in the top 1% of restaurants worldwide. The Good Food Guide 2025 noted the “pleasing backdrop” and “equally pleasing food.” The team—from chefs to front of house—and the excellence of local suppliers make this recognition possible. It’s a restaurant that lets the landscape speak through its cooking, without fuss or pretence.
