Aly’s Bakery

Chef Ali Açıkgül's tiny York bakery holds the trademark for the San Sebastian cheesecake, offering perfectly baked slices and seasonal flavours recognised by The Good Food Guide.

The story

Aly's Bakery York: Award-Winning San Sebastian Cheesecake Specialist

At 81 Gillygate, Aly's Bakery in York stands as a dedicated home for artisanal cheesecake, rooted in nearly four decades of culinary expertise from founder Chef Ali Açıkgül. The Good Food Guide named this tiny bakery a Local Gem for its commitment to preserving the authentic craftsmanship behind one of the world's most recognised desserts.

The Chef and the Craft

Chef Ali's career began in 1986 and includes two published cookbooks, one of which placed third at the 2022 Gourmand World Cookbook Awards. He discovered a traditional baking method in Spain's Basque region and reimagined it for his San Sebastian cheesecake. While many versions rely on a flowing centre, his recipe is perfectly baked throughout, delivering a delicate, creamy texture beneath a subtle caramelised finish. As the official trademark holder of the original San Sebastian Cheesecake recipe, he guards the integrity of a dessert he helped introduce to global audiences.

Flavours and Offerings

Visitors order the classic San Sebastian cheesecake alongside seasonal variations including coffee, chocolate, and pistachio. The display also features savoury börek, fresh bread, and an assortment of cakes and cookies. Prices sit at £28 for a small eight-slice cake and £50 for a large fourteen-slice portion. Beyond retail sales, Chef Ali runs regular baking workshops for novices, sharing the techniques that define his pastry shop.

Space and Setting

The shop itself is compact, designed around the counter where orders are prepared and collected. A handful of tables allow guests to linger over their slices or enjoy coffee and infusions on-site. This focused layout keeps the attention on the quality of the pastries rather than elaborate décor. It remains a neighbourhood spot for those who value precision in every bite.

The Good Food Guide — Local Gem

Turkish chef Ali Açikgül opened this tiny bakery, pastry shop and café to specialise in various types of cheesecake – notably coffee, chocolate, pistachio and the beautiful shiny-topped Basque or San Sebastián versions (a top pick). In addition, he also sells cakes and cookies, bread and savoury börek, plus decent coffee, infusions and other soft drinks. There are a couple of tables inside the shop if you want to linger, although it's the cheesecake you're really here for. Note that the owner hosts regular workshops for baking novices.
